Second-generation distillery continuing the Lark family legacy

Killara Distillery represents a continuation of Tasmania’s whisky legacy, established by second-generation distiller Kristy Lark-Booth. With over 18 years of experience, including her tenure as head distiller and general manager at the acclaimed Lark Distillery, Kristy has produced award-winning spirits both nationally and internationally. Named after the street where her parents Bill and Lyn Lark registered Australia’s first modern distillery in 1992, Killara honors this pioneering heritage. The distillery features a distinctive 600-liter copper pot still with a top-mounted condenser, specially designed and manufactured in Hobart. The cellar door operates 11am-4pm Wednesday through Saturday. Nearby attractions include Cole Dale Walnut Farm, Puddle Duck Vineyard, Roslyn 1823 winery, Tunnel Hill Mushrooms, and Richmond heritage town. The facility is dog-friendly, wheelchair-accessible, motorhome-friendly, and features a picnic area.
