Australia's southernmost distillery on 100 acres with five spring water sources near Port Arthur

This casual comment from a Sydney neighbour led Bill McHenry to Port Arthur, Tasmania, where he operates Australia’s southernmost Distillery and Brewery. Founded in 2011, the distillery occupies a 100-acre property with tranquil surroundings and access to pure spring water from five on-site springs. The southern Tasmanian climate mirrors Scottish conditions with high humidity and cool temperatures, resulting in delicate, complex whiskies. All base ingredients are locally sourced. Their first single malt whisky launched in 2016 with subsequent international acclaim. The expanded product range now includes gin, beer, whisky, tonic water, and canned ready-to-drink beverages. Cellar Door: Located in the Tasman Peninsula forest, the cellar door offers tasting flights, cheese boards, and cocktails. Distillery tours operate at 12pm and 2pm on weekdays. Additional Locations: Weekly stall at Salamanca Market and a shop at Brooke Street Pier.
